Roasted Lemon Herb Chicken

Makes 4 servings.

Ingredients:

  • Juice and zest from 2 lemons

  • 2 cloves garlic, minced

  • ⅓ cup olive oil

  • 1 tbsp. chopped rosemary

  • 1 tbsp chopped thyme

  • 4 chicken thighs (breasts or drumsticks can be substituted)

  • Salt & Pepper to taste


Directions:

  1. Preheat oven to 375 degrees.

  2. Whisk together all ingredients but the chicken in a bowl.

  3. Lay chicken flat in a dish, pour marinade over, and allow to sit for at least 1 hour.

  4. Roast in oven for 35-40 minutes, or until internal temperature reaches 165 and the chicken skin is crispy and brown.
