Quick Frittata

Don’t stress about breakfast, make this quick frittata instead! It’s simple, and makes enough to feed four. This is an especially good breakfast if you want to limit your carbohydrates in the morning. We suggest avocado and a half cup of berries to round out the plates.

Yields 4 Servings

•8 eggs
•1/4 cup of crumbled feta
•1 cup of broccoli
•1 small sautéed leek (1/3 cup)

1. Preheat oven to 375.
2. Whisk eggs, add all other ingredients to bowl.
3. Pour into preheated frying pan and simmer on the stove until edges begin to cook.
4. Place in oven and bake until middle is cooked through.
